Dried Orange Zest & Winter Lettuce Salad with Orange Dust
By a landslide, these two recipes are the easiest from this cookbook thus far.
First up: dried orange zest. After cleaning the oranges well, I shaved the zest, placed the shavings on a plate and sun bathed them for a couple days. For the final left over moisture, the shavings were baked on low for a few minutes. From shavings to zest dust without fancy equipment; the book instructed me to clean out my coffee bean grinder with bread to clear up the coffee bean oils. The fresh scent of orange filled my kitchen for hours.
With three simple ingredients (lettuce, shallots, & craisins) and a homemade vinaigrette, this salad a would have been just run-of-the-mill. But the point of these recipes is to take something that's good and make it great. The dried orange zest sprinkled atop added a spring like flavor that made the salad so yummy . Yummy enough to have made the same salad for dinner too.
